Walking an applicant around the office and watching the applicant's responses to the physical space, can offer insight into how that applicant views their potential work space and co-workers. I have seen applicants become silly, tense, defensive, and even inappropriate in a walk through, while they interviewed in my office very well. What you hope to see is the applicant who maintains a comfortable demeanor and a friendly and professional attitude. A walk through is not just for the applicants benefit, and does not mean you have the job. Good luck to you
